Main Ingredients:
- 1 pound catfish fillets cut into 2-inch nuggets
- 1 large egg
- ¼ cup buttermilk
- Cooking spray
Breading Mix:
- 1 cup yellow cornmeal
- ½ cup all-purpose flour
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Make Coating Mixtures:
Bowl 1: Whisk egg and buttermilk together
Bowl 2: Combine cornmeal, flour, and all seasonings
Bread the Fish:
Dip each piece in egg mixture
Coat thoroughly in cornmeal mixture
Place on plate and let rest 5 minutes
Air Fry:
Preheat air fryer to 400°F
Spray basket with cooking spray
Place nuggets in single layer
Spray tops lightly with cooking spray
Cook 10-12 minutes, flipping halfway
- Don't overcrowd the air fryer basket
- Cook in batches if necessary
- Fish is done when it flakes easily with a fork
- Internal temperature should reach 145°F
- Serve immediately for maximum crispiness
Storage:
- Store leftovers in airtight container
- Refrigerate up to 2 days
- Reheat in air fryer at 350°F for 3-4 minutes
