Ingredients
  

  • 2 medium zucchinis
  • 1/2 cup flour or almond flour for gluten-free
  • 2 large eggs
  • 1 cup Panko breadcrumbs or gluten-free breadcrumbs
  • 1/2 cup grated Parmesan cheese optional
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray

Instructions
 

  • Prep the Zucchini: Wash and dry the zucchinis. Cut off the ends and slice into sticks.
  • Prepare Coating Stations: Set up three bowls – one with flour, one with beaten eggs, and one with a mix of Panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  • Coat the Zucchini: Dip each zucchini stick into the flour, then the egg, and finally the breadcrumb mixture. Ensure each stick is well-coated.
  • Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  • Air Fry: Arrange the coated zucchini sticks in a single layer in the air fryer basket. Lightly spray with cooking spray.
  • Cook: Air fry at 400°F for 8-10 minutes, shaking the basket halfway through, until golden and crispy.
  • Serve: Serve immediately with your favorite dipping sauce.

Notes

  • For extra crispiness, use Panko breadcrumbs.
  • To make the recipe vegan, substitute eggs with a flaxseed and water mixture.
  • Serve with marinara, ranch, or garlic aioli for a tasty dipping option.
