Shrimp:
- 2 lbs large shrimp 16-20 count
- 3 tbsp olive oil
- 4 cloves garlic minced
- 1 tbsp lemon juice
- Salt and pepper
Stuffing:
- 1½ cups Ritz crackers crushed
- ½ cup butter melted
- ¼ cup fresh parsley
- 2 cloves garlic minced
- 1 tsp Old Bay seasoning
- ¼ cup white wine optional
Preheat oven to 375°F
Butterfly shrimp, leaving tails on
Mix crushed crackers with melted butter and seasonings
Layer shrimp in baking dish
Top each shrimp with stuffing mixture
Bake 20-25 minutes until golden
Serve immediately while hot
