Ingredients
  

Shrimp:

  • 2 lbs large shrimp 16-20 count
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tbsp lemon juice
  • Salt and pepper

Stuffing:

  • cups Ritz crackers crushed
  • ½ cup butter melted
  • ¼ cup fresh parsley
  • 2 cloves garlic minced
  • 1 tsp Old Bay seasoning
  • ¼ cup white wine optional

Instructions
 

  • Preheat oven to 375°F
  • Butterfly shrimp, leaving tails on
  • Mix crushed crackers with melted butter and seasonings
  • Layer shrimp in baking dish
  • Top each shrimp with stuffing mixture
  • Bake 20-25 minutes until golden
  • Serve immediately while hot

Notes

  • Use fresh or fully thawed shrimp
  • Pat shrimp dry before stuffing
  • Don't overstuff shrimp
  • Watch carefully to avoid overcooking
