- 1 lb large shrimp, peeled and deveined
- 6 oz Andouille sausage, thinly sliced
- 2 tbsp olive oil
- ½ yellow onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 2-3 cloves garlic, minced
- 1 tbsp Cajun seasoning
- ½ cup crushed tomatoes
- 1 cup chicken broth, sodium-free
- 1 cup heavy cream
- ⅔ cup grated Parmesan cheese
- 10 oz fettuccine pasta
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Prepare Ingredients: Season shrimp with salt, pepper, and Cajun seasoning.
Cook Shrimp: In a large skillet, heat olive oil over medium-high. Add shrimp and cook until pink, about 2-3 minutes per side. Remove and set aside.
Cook Sausage: In the same skillet, add sausage and cook until browned. Remove and set aside.
Sauté Vegetables: Add more oil if needed, then onion, bell pepper, and garlic. Cook until softened.
Cook Pasta: Boil pasta until al dente; drain.
Make Sauce: In the skillet, add crushed tomatoes and chicken broth. Bring to a simmer. Stir in heavy cream and Parmesan until smooth.
Combine: Add pasta, shrimp, and sausage back into the skillet. Toss to combine and heat through.
Serve: Garnish with parsley and serve hot.
