Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 6 oz Andouille sausage, thinly sliced
  • 2 tbsp olive oil
  • ½ yellow onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 2-3 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • ½ cup crushed tomatoes
  • 1 cup chicken broth, sodium-free
  • 1 cup heavy cream
  • cup grated Parmesan cheese
  • 10 oz fettuccine pasta
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Prepare Ingredients: Season shrimp with salt, pepper, and Cajun seasoning.
  • Cook Shrimp: In a large skillet, heat olive oil over medium-high. Add shrimp and cook until pink, about 2-3 minutes per side. Remove and set aside.
  • Cook Sausage: In the same skillet, add sausage and cook until browned. Remove and set aside.
  • Sauté Vegetables: Add more oil if needed, then onion, bell pepper, and garlic. Cook until softened.
  • Cook Pasta: Boil pasta until al dente; drain.
  • Make Sauce: In the skillet, add crushed tomatoes and chicken broth. Bring to a simmer. Stir in heavy cream and Parmesan until smooth.
  • Combine: Add pasta, shrimp, and sausage back into the skillet. Toss to combine and heat through.
  • Serve: Garnish with parsley and serve hot.
