  • 2 cups elbow macaroni
  • 1 cup shredded American cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated Romano cheese
  • 1 cup grated Colby Jack cheese for topping
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 1 cup heavy cream
  • 1 cup whole milk
  • Salt and pepper to taste

Instructions
 

  • Cook the pasta: Boil water in a large pot, add salt, and cook elbow macaroni until al dente.
  • Make the roux: Melt butter in a saucepan, add flour, and stir for 1-2 minutes.
  • Prepare cheese sauce: Gradually add heavy cream and milk to the roux, stirring until smooth. Simmer until thick.
  • Combine cheeses: Lower heat, add American, Parmesan, and Romano cheeses, stirring until melted.
  • Mix pasta and sauce: Drain pasta, return to pot, add cheese sauce, and mix well. Season with salt and pepper.
