Ingredients
  

  • 1 and 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 2/3 cup sugar
  • 3/4 cup quick-cooking oats
  • 1/4 cup canola oil
  • 2 large eggs
  • 1/3 cup milk
  • 3 very ripe bananas
  • For the topping:
  • 1/2 cup sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons softened butter
  • 1 teaspoon cinnamon

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  • In a medium bowl, mix flour, baking powder, baking soda, salt, and sugar. Add oats.
  • In a separate large bowl, whisk together oil, eggs, milk, and mashed bananas.
  • Fold dry ingredients into wet ingredients until just combined.
  • Mix topping ingredients in a small bowl until crumbly.
  • Pour half of the batter into the prepared pan. Sprinkle half of the topping over the batter. Repeat with remaining batter and topping.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
