- 1 and 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon salt
- 2/3 cup sugar
- 3/4 cup quick-cooking oats
- 1/4 cup canola oil
- 2 large eggs
- 1/3 cup milk
- 3 very ripe bananas
- For the topping:
- 1/2 cup sugar
- 2 tablespoons all-purpose flour
- 2 tablespoons softened butter
- 1 teaspoon cinnamon
Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
In a medium bowl, mix flour, baking powder, baking soda, salt, and sugar. Add oats.
In a separate large bowl, whisk together oil, eggs, milk, and mashed bananas.
Fold dry ingredients into wet ingredients until just combined.
Mix topping ingredients in a small bowl until crumbly.
