Creamy Potato and Hamburger Soup

- 1 lb ground beef 80/20
- 4 medium Yukon Gold potatoes diced
- 1 medium onion diced
- 2 carrots sliced
- 2 celery stalks chopped
- 3 garlic cloves minced
- 4 cups chicken broth
- 2 cups heavy cream
- 1 cup shredded cheddar cheese
- 2 tbsp butter
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Brown ground beef in large pot over medium heat (8-10 minutes)
Add onions, carrots, celery; cook until softened (5 minutes)
Add garlic, cook until fragrant (1 minute)
Add potatoes, broth, thyme; bring to simmer
Cook until potatoes are tender (15-20 minutes)
Reduce heat; stir in cream and cheese
Simmer until thickened (5-10 minutes)
Season with salt and pepper
Garnish with parsley and serve hot
Storage: Refrigerate up to 3 days. Reheat gently, adding broth if needed.
