Ingredients
  

  • 1 lb ground beef 80/20
  • 4 medium Yukon Gold potatoes diced
  • 1 medium onion diced
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 3 garlic cloves minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 cup shredded cheddar cheese
  • 2 tbsp butter
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Brown ground beef in large pot over medium heat (8-10 minutes)
  • Add onions, carrots, celery; cook until softened (5 minutes)
  • Add garlic, cook until fragrant (1 minute)
  • Add potatoes, broth, thyme; bring to simmer
  • Cook until potatoes are tender (15-20 minutes)
  • Reduce heat; stir in cream and cheese
  • Simmer until thickened (5-10 minutes)
  • Season with salt and pepper
  • Garnish with parsley and serve hot

Notes

Storage: Refrigerate up to 3 days. Reheat gently, adding broth if needed.
