- 2 lbs potatoes preferably Russet
- 2 cups all-purpose flour
- 1 large egg beaten
- 1 lb ground beef
- 1 lb ground pork
- 1 onion finely chopped
- 2 carrots finely chopped
- 2 celery stalks finely chopped
- 4 cloves garlic minced
- 1 cup red wine
- 28 oz crushed tomatoes
- 2 tablespoons tomato paste
- Salt and pepper to taste
- Fresh basil for garnish
Prepare the Gnocchi:
Boil the potatoes until tender, peel and mash.
Mix mashed potatoes with flour and egg to form a dough.
Roll dough into long ropes, cut into pieces, and press with a fork for ridges.
Boil gnocchi until they float to the surface, then drain.
Make the Bolognese Sauce:
Sauté onion, carrots, celery, and garlic until softened.
Add ground beef and pork, cook until browned.
Pour in red wine; reduce.
Stir in crushed tomatoes and tomato paste, simmer for at least 2 hours.
Season with salt and pepper.
