Ingredients
  

  • 2 lbs potatoes preferably Russet
  • 2 cups all-purpose flour
  • 1 large egg beaten
  • 1 lb ground beef
  • 1 lb ground pork
  • 1 onion finely chopped
  • 2 carrots finely chopped
  • 2 celery stalks finely chopped
  • 4 cloves garlic minced
  • 1 cup red wine
  • 28 oz crushed tomatoes
  • 2 tablespoons tomato paste
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions
 

Prepare the Gnocchi:

  • Boil the potatoes until tender, peel and mash.
  • Mix mashed potatoes with flour and egg to form a dough.
  • Roll dough into long ropes, cut into pieces, and press with a fork for ridges.
  • Boil gnocchi until they float to the surface, then drain.

Make the Bolognese Sauce:

  • Sauté onion, carrots, celery, and garlic until softened.
  • Add ground beef and pork, cook until browned.
  • Pour in red wine; reduce.
  • Stir in crushed tomatoes and tomato paste, simmer for at least 2 hours.
  • Season with salt and pepper.

Combine and Serve:

  • Toss cooked gnocchi with the Bolognese sauce.
  • Garnish with fresh basil and serve.
