  • 4 tbsp unsalted butter
  • 1 tbsp chopped fresh herbs thyme, parsley, tarragon, or chives
  • 1 clove garlic optional, minced
  • Juice of half a lemon
  • Salt and pepper to taste
  • Optional: Capers for added tanginess

Instructions

Step 1: Prepare the Monkfish

  • Pat the monkfish fillets dry with a paper towel.
  • Season both sides generously with salt and pepper.
  • Heat a non-stick or cast-iron skillet over medium-high heat with a drizzle of olive oil.
  • Sear the fillets for 3-4 minutes per side until golden and cooked through. Remove and set aside.

Step 2: Make the Herb Brown Butter

  • In the same skillet, lower the heat to medium.
  • Add butter and let it melt, stirring constantly.
  • Watch for the butter to turn golden brown and release a nutty aroma (about 2-3 minutes).
  • Add minced garlic and fresh herbs, stirring briefly to infuse the flavors.
  • Squeeze in the lemon juice and season with salt to taste.

Step 3: Combine and Serve

  • Drizzle the herb brown butter generously over the seared monkfish fillets.
  • Garnish with extra herbs and lemon wedges for a restaurant-quality presentation.
