Ingredients
  

For the Bowls:

  • 4 6 oz salmon fillets, skin-on
  • 2 cups sushi rice
  • 1 large avocado sliced
  • 2 cups cucumber diced
  • 2 cups carrots julienned
  • 4 radishes thinly sliced
  • 2 cups edamame shelled
  • 4 green onions chopped
  • Sesame seeds for garnish

For the Sauce:

  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tbsp ginger grated
  • 2 cloves garlic minced

Instructions
 

  • Cook rice according to package instructions
  • Mix sauce ingredients in a bowl
  • Pat salmon dry and season
  • Sear salmon skin-side down (4-5 minutes)
  • Flip and cook additional 3-4 minutes
  • Divide rice between bowls
  • Top with salmon and vegetables
  • Drizzle with sauce and garnish

Notes

  • Always pat salmon completely dry before searing for crispy skin
  • Cook rice slightly firmer as it will continue to steam in the bowl
  • Prep all vegetables before starting to cook salmon for best timing
