For the Bowls:
- 4 6 oz salmon fillets, skin-on
- 2 cups sushi rice
- 1 large avocado sliced
- 2 cups cucumber diced
- 2 cups carrots julienned
- 4 radishes thinly sliced
- 2 cups edamame shelled
- 4 green onions chopped
- Sesame seeds for garnish
For the Sauce:
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp honey
- 1 tbsp ginger grated
- 2 cloves garlic minced
Cook rice according to package instructions
Mix sauce ingredients in a bowl
Pat salmon dry and season
Sear salmon skin-side down (4-5 minutes)
Flip and cook additional 3-4 minutes
Divide rice between bowls
Top with salmon and vegetables
Drizzle with sauce and garnish
