  • 6 ounces sushi-grade tuna finely diced
  • 2 tablespoons Kewpie mayonnaise
  • 1 teaspoon sriracha adjust for spice level
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon chopped green onions

Optional Garnishes:

  • Avocado slices
  • Sesame seeds
  • Thinly sliced jalapeños
  • Nori strips

Instructions
 

Step 1: Prepare the Rice

  • Cook sushi rice according to package instructions. Once cooked, mix with rice vinegar, sugar, and salt.
  • Spread the rice evenly into a tray or baking dish, pressing it down firmly to create an even layer.
  • Refrigerate for 1-2 hours to allow the rice to firm up.
  • Once chilled, cut the rice into small rectangular or square pieces.

Step 2: Fry the Crispy Rice

  • Heat vegetable oil in a skillet over medium heat.
  • Fry the rice pieces in batches, flipping them to ensure both sides are golden brown and crispy (about 2-3 minutes per side).
  • Drain the fried rice pieces on paper towels and set aside.

Step 3: Make the Spicy Tuna Topping

  • In a bowl, combine diced tuna, Kewpie mayonnaise, sriracha, soy sauce, sesame oil, and green onions.
  • Mix until the tuna is evenly coated and creamy.

Step 4: Assemble the Dish

  • Place a spoonful of spicy tuna topping onto each crispy rice piece.
  • Garnish with your choice of toppings, such as avocado slices, sesame seeds, or jalapeños.
  • Serve immediately and enjoy!
