Ingredients
  

For the Wontons:

  • ½ pound ground pork
  • ¼ cup finely chopped green onions green and white parts
  • 1- inch piece fresh ginger peeled and grated
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon rice vinegar
  • ½ teaspoon sesame oil
  • 20 wonton wrappers
  • ½ cup water

For the Egg Drop Soup:

  • 4 cups low-sodium chicken broth or vegetable broth
  • ½ cup sliced green onions green parts only
  • 1 tablespoon low-sodium soy sauce
  • ½ teaspoon salt more or less to taste
  • ½ teaspoon ground ginger
  • ¼ teaspoon freshly cracked black pepper more or less to taste
  • 2 large eggs

Instructions
 

Preparing the Wontons

  • Mix the Filling: In a large mixing bowl, combine ground pork, chopped green onions, grated ginger, soy sauce, rice vinegar, and sesame oil. Mix until just combined.
  • Fill the Wonton Wrappers: Lay out wonton wrappers on a parchment-lined surface. Use a cookie scoop or teaspoon to place a small amount of the pork mixture in the center of each wrapper.
  • Fold and Seal: Lightly wet the edges of the wrapper with water. Fold the wrapper over the filling to form a triangle, then press the edges to seal. Fold the corners in towards the center and press to seal again.

Preparing the Egg Drop Soup

  • Heat the Broth: In a large pot, bring the chicken broth, sliced green onions, soy sauce, salt, ground ginger, and black pepper to a boil. Reduce heat to medium-low and let it simmer.
  • Create Egg Ribbons: Whisk the eggs in a small bowl until fully scrambled. Stir the broth in a circular motion, then slowly pour the whisked eggs into the pot in a thin stream, creating ribbons.
  • Add Wontons: Carefully add the wontons to the simmering soup. Let them cook for 5-8 minutes, or until they float to the surface.
